Raw Carrot Broccoli Salad Recipe

Spring time is upon us and that means fresh veggies are easier to find. It is important to find recipes and nutrition selections that are easy to make and satiate the appetite. One of our favorite recipes is Raw Carrot Broccoli Salad. It is comprised of all super food vegetables. This means every bite gives you energy and helps equip your body with the building blocks for a strong immune system.

Prep Time: 10 Minutes

Ingredients
1 medium heirloom tomato
1 lb shredded carrots
2 cups chopped celery
3 cloves of garlic minced or pressed
1 cup chopped cilantro
2 Heads Broccoli chopped.
2 whole Lemons

Set lemons aside. Chop and Mix all other ingredients in a large bowl. Cut lemons in half and squeeze juice into mix. The lemon juice will act as a preservative so you can keep in your fridge for a few days and it will still be fresh. Enjoy by itself, or use to garnish Salads or mix with humus for a great treat
